Vegan Caesar Salad Dressing Recipe

A Caesar salad is an absolute classic, and there is no need to miss out if you’re vegan. This vegan Caesar salad dressing is delicious, and it recreates that classic flavour using Plenish Cashew Milk, cornichons and cashew nuts. The original Caesar salad gets its name from Italian chef Caesar Cardini, and apparently, he made it from the remaining ingredients he had lying around. This vegan Caesar salad dressing is super simple to make, and you’ll probably have most of the ingredients to hand too.

Serves 2

Ingredients for the Caesar Salad Dressing

2 slices of cornichons (pickled gherkins or cucumbers)

1 cup cashew nuts

500 ml Plenish Cashew Milk

5 garlic cloves

60 ml water

120 ml olive oil

10 ml maple syrup

30 ml lime juice

1 tsp chilli flakes

1 tbsp dijon mustard

15 ml white wine vinegar

Salt and pepper

How to Make the Vegan Caesar Salad Dressing

  1. Simply add all of the ingredients into a blender and blend until you have a smooth dressing consistency.
  2. Simply drizzle your dressing all over your romaine and baby gem salad leaves.
  3. Stir the dressing gently over the leaves, so they are nicely coated.
  4. Finish off your salad with croutons and nutritional yeast, if desired.
