Mango and Coconut Overnight Oats

The breakfast for summer has arrived. This mango and coconut milk overnight oats recipe is easy to make and packed full of tropical flavours. Simply prep the night before for a no-fuss, 7-ingredient breakfast or snack option that will keep you fuller for longer. Let us show you how it’s done!

What are overnight oats? 

Overnight oats are a no-cook method of making porridge and involve soaking rolled oats in a liquid mixture overnight. The soaking process allows the oats to absorb the liquid and softens them so they can be eaten uncooked. If you are short on time, you can soak and rest the overnight oat mixture for 2 hours before eating; however, soaking overnight is recommended for optimum results. The next morning you will have a delicious, healthy breakfast with a similar consistency to porridge. This makes for an easy and refreshing alternative to warm porridge during the summer months. 

Mango and Coconut Overnight Oats Recipe 

Coconut milk provides an extra creamy base for these overnight oats, toppings of fresh mango and passionfruit add natural sweetness, and swirls of coconut yoghurt and chia seeds pack in a healthy dose of plant-powered protein. To finish, a sprinkle of toasted coconut chips gives a little crunch and healthy fats to boot! Together, these flavour combinations make a refreshing bowl that’s perfect for a hot summer’s day.

Ingredients:

  • 110g rolled oats
  • 1 tbsp chia seeds
  • 325ml Plenish coconut milk
  • 1 passion fruit
  • 1/2 mango, cubed
  • 15 g toasted coconut chips
  • 4 tbsp coconut yoghurt

Method:

1. Place the oats and chia in a bowl. Add the coconut milk and stir. Cover and place in the fridge to soak overnight

2. Serve with fresh mango, passionfruit, coconut yoghurt and toasted coconut.
